Southern Pecan Pie and Other Fabulous Pecan Recipes!
Of course we have to start our recipe collection with an easy one for Southern pecan pie. This most famous of the Southern nut pies is a staple for many from Thanksgiving through Christmas, and we hope you will enjoy this recipe! Our Christmas salad and our Honey Toasted Pecan Salmon will create a memorable feast that your family and friends will remember for years to come.
Easy Southern Pecan Pie
Pecan Pie Filling: 1 cup sugar 1/4 cup butter, softened (no substitutions!) 1/2 cup warmed corn syrup 3 eggs, well beaten 1 cup pecan pieces *Easy Pie Crust: (if you prefer to make your own; you also may use a ready made crust) 1 1/2 cups flour 1/2 tsp. salt 1 cup oil 1/4 cup cold water To make crust, mix flour with salt, make a 'bowl' in the center, and add oil to the center. Immediately add water and mix into one mass, making sure not to mix too much! Roll out to fit a 9-inch pie pan. Place in the oven at 350° F for 10 minutes until golden. Note: if using ready made crust, do not pre-cook it as stated above. Simply put the pie filling into the crust before baking. Directions for pie filling: Mix sugar and butter until fluffy. Then add corn syrup and mix well. Slowly add eggs and continue to mix well until no lumps appear. Pour pecan pieces into the crust*, followed by the filling mixture. Bake in oven preheated to 400° F for 10 minutes. Reduce heat to 350° F and continue baking for 25 to 30 minutes. Do not overcook. Enjoy immensely!
Chocolate Chip Pecan Pie
1 cup sugar4 eggs 1 cup Karo syrup 1 teaspoon vanilla 1 stick butter (no substitutions!) 1 cup chopped pecans 1 6 oz. package of semi-sweet chocolate chips Mix sugar, eggs, syrup and vanilla and blend well. Melt butter and add to the mixture along with pecans and chocolate chips. Pour into an unbaked 9- or 10-inch pie crust. Bake at 350° F for 40 to 50 minutes, or until set. Serves eight very fortunate guests!
Festive Christmas Pecan & Pomegranate Salad
This salad is a family creation of ours and a holiday hit! Its festive color and the delicious crunch of our Going Nuts honey toasted pecans is the perfect salad creation for your holiday feast. Ingredients: 1 lb. baby spinach leaves Pomegranates (about 1/2 cup) 6 oz. crumbled feta cheese 1/4 lb. Going Nuts' Honey Toasted Pecans Raspberry Vinaigrette dressing (we prefer Annie's Naturals Lite) Mix spinach, pomegranates, feta cheese, and pecans together. Add dressing to taste, and enjoy! Serves about 14.
Honey Toasted Barbecue Salmon
This idea is one of our classic family recipes adapted to our delicious honey toasted pecans! They are so versatile, they can be used in numerous recipes as well as enjoyed as an appetizer or dessert. We love salmon, and imagine that you do, too! So give this recipe a try: Whole salmon (you may also substitute trout if desired) Penzeys Spices' 'Barbecue of the Americas' Rub 4 oz. Going Nuts honey toasted pecans Parsley and lemon for garnish Place whole salmon on preheated cedar plank (or other appropriate cooking pan). Sprinkle on Penzeys Spices’ ‘Barbecue of the Americas’ rub. Place in oven at 350 degrees for 25 minutes. Remove, drizzle honey or agave nectar on salmon, and add Going Nuts honey toasted pecans. Put back in oven for five minutes. Remove, add parsley and lemon slices for garnish, and enjoy!
